A Unique Day Trip to Fredericksburg, Texas
Fredericksburg, Texas is one of those places I could just keep going back to again and again.
Small town Texas charm, German heritage, and amazing wine are just a few of the reasons why.
This particular trip to Fredericksburg was not a typical one. Usually, we head out there when spring flowers are blooming, or fall is upon us. This time, I surprised my Husband with a one night stay for his Birthday in late February.
We definitely strayed away from our usual agenda of wine tasting, so read on to see what we did on our unique day (Tuesday!) in Fredericksburg, Texas.
No Surprise Here
This trip was supposed to be a surprise.
I asked my parents to watch our son overnight, Brandon had the day off, it seemed perfect for a surprise. I found a super cute place to stay with a Japanese soaking tub out front (more on that later), and booked it!
He thought he only had the day off from work, so he kept asking me what we should do for the day because “we didn’t have a lot of time.” When you wake up a toddler, take them to school, and then need to pick them up from school, a day off is really not that long!
Long story short, I finally had to tell him my plan so he could stop worrying and instead get excited about our adventure.
Breakfast in Fredericksburg
After dropping off our son at school in the morning, we booked it out to Fredericksburg to make the most of our time.
We made it to the Old German Bakery and picked up a cream cheese and cherry strudel, and a sausage and cheese kolache to go. Decadent and SO good! The sit-down breakfast looked good so we decided to come back the next morning on our way out.
To keep you from the suspense. the next morning I had a german pancake that was amazing. I feel like it’s a cross between a crepe and a pancake. He had sausage, gravy, and biscuits. Neither of us was disappointed. 🙂
Pro Tip: Fredericksburg can get really busy on the weekends! If you can’t travel there during the week, plan to wake up a little early in the morning to get a spot for breakfast without waiting. We also saw a lot of locals here, a good sign!
Touring the Texas Hill Country in Style
Renting a slingshot was something I never imagined doing – a small vehicle with no roof in 60-degree weather.
The slingshot was so much fun to drive around the hill country roads! We saw sites and stopped to look at views we would have never done in a car. There is a trail of historic schoolhouses in the Hill Country we stumbled on – pictured above.
The owner of Slingshot Rentals, Yann, was super helpful and flexible with timing. He met us in a parking lot to go over how to use the vehicle, safety, and routes to take.
Unfortunately, the weather in Fredericksburg worsened by the minute while we were out there, and we didn’t get to take full advantage of our time. If this is something you are considering – do it! This is definitely a splurge item, and in a little bit warmer weather it would have been absolutely amazing.

Pro Tip: I recommend starting your day with an activity like this, so you can enjoy sites early and then move on to drinks or shopping later in the day!
Drinks on Main Street
Most people come to this region for the wineries and they are outstanding. This trip we wanted to do something a little bit different.
With the temperature dropping outside, so we decided to check out what Main Street had to offer for drinks. We stopped into Elk Store Winery and Distillery for a liquor tasting. They distill whiskey, gin, rum, and moonshine, and also have some delicious cocktails. With two bars, one serving the cocktails, and one pouring glasses of wine, this spot will cater to anyone’s tastes.
The cozy atmosphere and friendly staff had us staying longer than we’d planned. Shoutout to the bartender who moved back to Fredericksburg to open his own wood-fired pizza company. I believe it’s open now and called Prometheus Pizza (@prometheuspizza on Insta). Going to give it a try next time we are out there!
Pro Tip: They sell their spirits and wine to take away as well, and sometimes have a sale section as you are browsing. I grabbed a Spanish Rioja for half the normal price on our way out! They even have smaller versions of their liquors which would make a great gift.
Dinner in Fredericksburg
After a bit of research, I settled on a spot we had never been to for dinner. Otto’s German Bistro.
Y’all, this place was so so good. Wonderful service, great atmosphere, and a new take on traditional German food. It felt like we were eating at a small restaurant down a side alley in Munich but in Fredericksburg Texas.
Pro Tip: This place is popular (even on a Tuesday it was full), so plan to make reservations in advance! Also, there is a taco bar next door with drinks, a good pre-dinner stop if you have extra time! Don’t forget to grab a photo of your food….as I did! 🙂

Fredericksburg Wine - Finally!
After dinner, we wanted to grab one more nightcap and decided to head over to one of the only places open after 6:00 pm – Perspective Cellars. It also happens to be one of my favorite tasting rooms on Main Street.
The premise here is that they offer perspective on Texas wines by selecting a Texas varietal and comparing it to the same varietal produced in other regions around the world. We had visited before, and loved it so much we were happy to go back! We had the place to ourselves and really enjoyed our last stop here.
This time around I did the Mourvedre tasting and the husband chose Port. His tasting was the winner – it was the perfect after dinner treat! It reminded us of our trip to Porto so much that it made us want to go back! The face of memories and happiness above.
Where to Stay in Frederisckburg
This time around we chose an Airbnb for our one night stay. I love the unique and affordable accommodations that Airbnb offers. I found a newly built studio with a Japanese soaking tub out front and boy was that a good idea. The temperature ended up dropping from 60 degrees to 40 degrees throughout the day, and the nice hot water soak was so lovely after that cold drizzly Fredericksburg weather!
